Delicious Mistake!

Last week I received a notification from Blue Apron regarding a new order that would be shipped and arriving this past Sunday. I was irritated because I had totally forgot to check the menu and/or skip to the next week but I had initially used a promotion code that made the price $20 for 3 meals for 2 people, so I wasn't too upset. Oh well!

The 3 meals I received weren't necessarily meals I would have selected, BUT for the price it was no big deal. The meals this week are:

  •  Katsu-Style Catfish with Black Garlic Mayonnaise & Jasmine Rice
  • Green Garlic Pesto Pasta with Butter Lettuce Salad & Creamy Lemon Dressing
  • Chicken Meatballs & Fregola Salad

Last night I decided to make the Chicken Meatball dish. As you can see, Blue Apron really lays it all out for you- easy recipe card with step-by-step instructions and individually packaged ingredients to make life even easier.


The first steps were to cook the pasta and kale with garlic & lemon (smelled SO GOOD!) and combine those together with mascarpone cheese.


Raisins have come with a few Blue Apron packages... If you know me, you know I will OMIT these EVERY TIME.


Next came the easy assembling and cooking of the chicken meatballs. Once the meatballs were browned, I added the tomato sauce and capers. NOTE: I was totally shocked at how much I liked the capers in this dish! It added a salty bite that was so good! I already added it to my grocery list for next grocery visit. The meatballs and sauce simmered for a few minutes until the meatballs were cooked all the way through. 


Finally, I assembled the plate by putting the kale and pasta mixture on the plate and then adding the meatballs and yummy caper/tomato sauce on top. 

The end result was delicious! I was surprised! I will definitely make this recipe on my own for sure. 


I really like Blue Apron for trying new things but it really is only cost effective for us (me and boyfriend) when I can get a great deal like I did this week. 

I plan to make the Green Garlic Pasta this evening- I'll let you know how it turns out!
