RANDOM: Mexican Corn Dip

So... if you are looking for the most beautiful appetizer, this won't be for you.

If you are looking for a delicious dip that almost everyone will like, then this is for you!

Last Sunday we were going over to my Uncle and Aunt's house to celebrate both of their birthdays. I offered to bring an appetizer. 

As usual, I was scrolling through Pinterest and came upon this Mexican Corn Dip. I went back and forth wondering if I should make it or not and finally decided to just go with it.

IT TURNED OUT SO GOOD!


I was surprised and everyone else seemed to really enjoy the dip as well. My Aunt's nephew even said, "It doesn't look good but it sure tastes good!" 

My sentiments exactly.

Here is what you need:

  • 3 cans of 11 oz Mexican, drained
  • 2 cans of 10 oz Rotel, drained
  • 1 1/2 cups of fat free plain Greek yogurt
  • 1/2 cups mayo
  • 1 1/2 cups shredded cheddar cheese
  • 1 oz package of Ranch dressing mix
  • 1 bunch of green onions, chopped
  • Salt & Pepper to taste

All you need to do is mix everything together and refrigerate until you are ready to eat it! I actually ate some leftovers just with a spoon the next day.

  1. Have you ever considered about including a little bit more than just your articles? I mean, what you say is valuable and everything. However imagine if you added some great visuals or videos to give your posts more, "pop"!
